Equipment

  • 1 Wok or Non-stick Skillet A non-stick pan works best for the sugary glaze.
  • 1 Pot For boiling the yam.
  • 1 Kitchen Gloves Essential for peeling yam to prevent itching.

Ingredients

Main Ingredients

  • 10 oz Chinese Yam (Iron Stick Yam / Nagaimo) approx. 300g, peeled and cut into 2-inch logs

The Sauce

  • 2 tbsp Ketchup Heinz recommended for balance
  • 1 tbsp White Sugar Adjust to taste
  • 1 tsp Cooking Oil Neutral oil like vegetable or canola

Garnish

  • 1 tsp White Sesame Seeds Toasted

Instructions

  • Prep the Yam (Safety First): Wear latex or rubber gloves to prevent itching. Wash the Chinese yam thoroughly to remove dirt. Peel the skin using a vegetable peeler and cut the yam into uniform logs or chunks, about 2 inches (5cm) long.
    Prep and Boil the Yam
  • Boil the Yam: Bring a medium pot of water to a boil. Carefully add the yam pieces and cook for 8-10 minutes, or until they are fork-tender. Drain well and set aside to air dry slightly.
    Prep and Boil the Yam
  • Create the Sauce Base: Heat a wok or non-stick skillet over medium-low heat. Add 1 teaspoon of cooking oil. Add the 2 tablespoons of ketchup and 1 tablespoon of sugar. Stir gently and continuously until the sugar fully dissolves and the sauce begins to bubble and smell aromatic.
    Create the Sauce Base
  • Toss and Coat: Add the boiled yam pieces into the pan. Quickly toss or stir-fry to coat every piece of yam evenly in the red sauce. The sauce should be thick enough to cling to the yam.
    Toss and Coat
  • Garnish and Serve: Remove from heat immediately. Transfer the yam to a serving plate and sprinkle with the toasted white sesame seeds. Serve hot.

Notes

Food Safety Warning: Raw Chinese yam contains oxalate crystals which can cause severe skin itching. Always wear gloves when peeling. If contact occurs, wash with vinegar. Ensure yams are fully cooked.
Recipe Notes:
  • Oxidation: If not boiling immediately, soak peeled yam in water with a splash of vinegar to prevent browning.
  • Texture: Boiling first ensures a fluffy interior. For a crunchier texture, you can stir-fry the raw yam longer, but the fluffy version is more traditional for this dish.
  • Sauce: If the sauce gets too thick before adding the yam, add a splash of water to loosen it.
