  • 1 Large Mixing Bowl
  • 1 bamboo or metal steamer
  • 1 Parchment paper or cabbage leaves (for lining the steamer)

Ingredients

For the Filling

  • 5 large eggs
  • 1 tbsp neutral oil (like canola or avocado oil), for eggs
  • 5 dried shiitake mushrooms
  • ½ cup dried wood ear mushrooms
  • 1 small carrot finely diced (about ½ cup)
  • 1 tbsp neutral oil for vegetables
  • 1 tbsp oyster sauce (or vegetarian oyster sauce)
  • 1 tbsp light soy sauce (use steamed fish soy sauce if you have it)
  • 1 tsp black pepper salt (or ½ tsp salt and ½ tsp ground black pepper)
  • ½ tsp sugar
  • ½ tsp thirteen-spice powder (or Chinese five-spice powder)
  • 1 tsp mushroom powder (or vegetable bouillon powder, optional)

For Assembly

  • 1 package round dumpling wrappers (about 40-50 wrappers,store-bought)

Instructions

  • Prep: Rehydrate dried shiitake and wood ear mushrooms in warm water for 30 minutes. Squeeze dry and chop finely. Finely dice the carrot.
  • Eggs: Whisk eggs and scramble in 1 tbsp of oil over medium heat to create small crumbles. Place in a large bowl.
  • Cook Veggies: Heat 1 tbsp of oil in the same skillet. Sauté chopped shiitake mushrooms until fragrant (2-3 min). Add carrots and wood ear mushrooms, sautéing with sugar and pepper salt until tender-crisp (2-3 min).
  • Make Filling: Add the cooked vegetables to the bowl with the eggs. Stir in oyster sauce, soy sauce, thirteen-spice powder, and mushroom powder. Mix well and let cool.
  • Assemble: Place 1 tbsp of filling in the center of a dumpling wrapper. Moisten the edge with water, fold into a half-moon, and press to seal tightly.
  • Steam: Line a steamer with parchment paper. Arrange dumplings inside, leaving space between them. Steam over boiling water for 12 minutes.
  • Serve: Let rest for 1-2 minutes before opening the lid. Serve hot with dipping sauce.
