Equipment

  • 1 Wok or Dutch Oven For deep frying. A heavy bottom maintains heat better.
  • 1 Kitchen Thermometer Essential for monitoring oil temperature (340°F).
  • 1 Spider Strainer For safely removing meatballs from hot oil.

Ingredients

Meat Base

  • 2.2 lbs Ground Pork (Shoulder/Butt) approx 20% fat
  • 2 large Eggs
  • 2 tbsp Shaoxing Wine or dry sherry
  • 2 tbsp Ginger finely minced
  • 1/2 tsp Star Anise Powder or Five Spice Powder
  • 2/3 cup Potato Starch
  • 1/3 cup Water for soaking starch
  • 2 oz Steamed Bun (Mantou) peeled, or crustless white bread

Seasoning

  • 2 tsp Kosher Salt adjust to taste
  • 1 tsp Sugar
  • 1 tsp Dark Soy Sauce
  • 2 tbsp Light Soy Sauce
  • 1/4 tsp Chicken Bouillon Powder optional
  • 3 cups Neutral Oil for frying

Instructions

  • Prep the Bun: Peel the skin off the steamed bun (or bread). Tear into small pieces and soak in a little water until soft. Squeeze out excess water thoroughly.
    Soak the Bun
  • Prep the Starch: Mix potato starch and 70g water in a bowl. Let sit for 15 minutes until starch settles. Pour off the clear water on top, keeping the wet starch paste.
    Prepare the Starch
  • Mix: In a large bowl, combine pork, eggs, ginger, star anise powder, soaked bun, salt, sugar, soy sauces, chicken powder, and the wet starch paste.
    Combine Ingredients
  • Whip: Stir vigorously in one direction (clockwise) until the mixture becomes sticky and develops a gelatinous texture (about 3-5 minutes by hand).
    The Mixing Technique (Vigorous Stirring)
  • Heat Oil: Heat oil in a wok to 340°F (170°C). Bubbles should form around a chopstick when inserted.
  • Shape: Use the "tiger mouth" method: squeeze a fistful of meat through your thumb and index finger to form a round ball. Scoop off with a spoon.
    Shaping the Meatballs
  • Fry: Carefully drop meatballs into the oil. Fry in batches. Do not overcrowd.
    Frying
  • Finish: Fry until they float and turn a deep golden red (approx 4-6 minutes). Remove and drain.
    Drain and Cool

Notes

  • The Texture Secret: Do not skip the soaked steamed bun (mantou). This starch-and-water mixture acts as a sponge, holding moisture inside the meatball even when fried at high temperatures. It is the key to achieving the authentic "crispy skin, tender heart" texture. If you omit it, the meatballs will be significantly denser.
  • Salt Adjustment: The 10g of salt listed creates a moderately seasoned meatball that is versatile enough to be eaten plain or added to salty soups later. If you prefer a bolder flavor for snacking, you can increase the salt slightly, but keep in mind that the soy sauce and chicken powder also contribute sodium.
  • Visual Cues for Doneness: The meatballs are ready when they turn a deep golden-red color and float effortlessly on the surface of the oil. Floating indicates that the moisture inside has turned to steam, lightening the ball and signaling it is cooked through.
  • Storage & Reheating: These meatballs freeze beautifully. Let them cool completely, then store in a freezer-safe bag for up to 3 months. To reheat, air fry at 350°F for 5-8 minutes for maximum crispiness, or drop them directly into boiling broth for a quick soup.
Salt: The 10g salt is moderate. If you prefer saltier food, increase slightly, but remember soy sauce adds sodium too.
Texture: Do not skip the soaking of the bun/bread; this is what keeps the meatball tender.
Safety: Ensure pork reaches an internal temperature of 160°F (71°C).
