Stir-fried Luffa (炒丝瓜) — a lightning-quick home-style dish that celebrates the clean, sweet flavor of fresh luffa gourd. No heavy sauces, no complicated techniques — just peak-season produce, a ripping-hot wok, and a handful of aromatics. The result is vibrant green, crisp-tender, and full of wok hei — that irresistible smoky essence only a properly seasoned wok can deliver.

Ingredients
- 1 luffa gourd (about 400 g / 14 oz), peeled and cut into rolling-wedge chunks
- 1 red chili pepper, cut into small pieces
- 15 g peanut oil, divided (10 g for stir-frying + 5 g for finishing)
- 5 g Shaoxing wine
- 15 g golden garlic paste (fried garlic in oil)
- 15 g raw garlic paste (freshly minced)
- 1 g salt
Instructions
Step 1: Peel and Cut the Luffa
Peel the luffa gourd and cut it into rolling-wedge chunks (irregular angled pieces that cook evenly and hold their shape).
Step 2: Prepare the Chili
Cut the red chili pepper into small pieces. This adds a gentle heat and beautiful color contrast to the green luffa.
Step 3: Stir-Fry the Luffa
Heat 10 g of peanut oil in a wok over high heat until shimmering. Add the luffa chunks and stir-fry, splashing in Shaoxing wine and a small amount of hot water during cooking to create steam and help the luffa cook evenly.
Step 4: Add the Chili
When the luffa reaches about 70–80% doneness (still slightly firm), add the red chili pieces and continue stir-frying until the luffa is just cooked through.
Step 5: Season with Garlic
Add the golden garlic paste (fried garlic) and raw garlic paste. Toss everything together — the mix of cooked and raw garlic gives incredible depth.
Step 6: Salt to Finish
Add 1 g of salt and toss to combine evenly. The salt draws out just enough moisture to create a light, natural sauce.
Step 7: Final Touch
Drizzle 5 g of finishing peanut oil around the edge of the wok for a beautiful glossy shine. Toss once more and plate immediately — the wok should be nearly dry at this point. If you keep cooking, the luffa will release too much water.
Step 8: Enjoy the Simplicity
This is a dish that celebrates the ingredient itself. Vibrant green luffa chunks, coated in a light natural glaze, tender-crisp on the outside and juicy within. Full of wok hei — that signature breath of the wok. The same method works beautifully with cucumber or winter melon.
Recipe Notes
Luffa (also called silk gourd, Chinese okra, or angled luffa) has a mild, slightly sweet flavor and a texture somewhere between zucchini and cucumber when cooked. Key tips: (1) Keep the wok hot — luffa releases water quickly, so high heat and fast cooking are essential to avoid a watery dish. (2) The golden garlic + raw garlic combination is a classic Cantonese technique that layers garlic flavor. (3) The finishing oil (包尾油) is a pro-level touch that gives the dish a restaurant-quality gloss. Serve immediately with steamed jasmine rice.
