Stir-Fried Fava Beans with Eggs (Can Dou Mi Chao Ji Dan)

Spring is the season when fresh broad beans (fava beans) flood the markets. Hidden inside those humble, slightly fuzzy pods are tender, emerald-green beans that are incredibly sweet and creamy. This recipe is a celebration of that seasonal freshness.

Stir-Fried Fava Beans with Eggs

Growing up, my mother would often make this dish when fava beans were at their peak. It is the definition of comfort food—simple, quick, and nutritious. The natural buttery texture of the beans pairs perfectly with the softness of the eggs. It’s much lighter than restaurant fare, using minimal oil and seasoning to let the ingredients shine. If you enjoy the simplicity of my Chinese Tomato and Egg Stir-fry, you will appreciate the clean, savory flavors here.

What Is Stir-Fried Fava Beans with Eggs?

Known in Mandarin as Can Dou Mi Chao Ji Dan (蚕豆米炒鸡蛋), this is a classic “jiachang cai” (homestyle dish). It features shelled broad beans stir-fried with aromatics and scrambled eggs. Unlike the dried fava beans often fried into crunchy snacks, this dish uses fresh “Can Dou Mi”—the bean meat itself.

Stir-Fried Fava Beans with Eggs

The texture is a delightful contrast: the beans should be soft and mealy (in a good way, like a chestnut), while the eggs remain fluffy. It brings a pop of spring color to the table with the bright green beans, yellow eggs, and flecks of red pepper.

Why This Recipe Works

  • Texture Contrast: Pre-cooking the eggs ensures they stay fluffy and don’t turn into a mushy paste when mixed with the beans.
  • Steam-Frying Technique: We use a “men” (braising) technique by covering the pot for 2 minutes. This ensures the beans are fully cooked and creamy inside without burning the exterior.
  • Minimal Seasoning: We skip heavy soy sauce or oyster sauce here. A little salt and white pepper are all you need to highlight the natural sweetness of the legumes.

Key Ingredients & Substitutions

  • Fava Beans (Can Dou Mi): You need fresh broad beans, shelled.
    • Fresh: If buying pods, you will need about 1.5 lbs of pods to get 150g of beans. If the beans are very young, the inner skin is tender. If they are large and starchy, you may want to peel the outer greyish skin of the individual bean for a better mouthfeel.
    • Frozen: Frozen double-peeled fava beans work excellently. Thaw them before using.
  • Eggs: Large chicken eggs.
  • Cooking Wine (Liao Jiu): A splash of Shaoxing wine in the eggs removes any “egginess” and adds a subtle aroma.
  • Aromatics: A scallion (spring onion) adds fragrance, while a small red pepper adds color and a tiny hint of heat. You can use red bell pepper for zero heat or a fresh red chili for a kick.
  • White Pepper: Added at the very end, this lifts the flavor and complements the eggs perfectly.

Ingredients

  • 1 cup (150 g) Fava beans (shelled weight)
  • 3 Large eggs
  • 1 Scallion (spring onion)
  • 1 Small red pepper (fresh chili or red bell pepper)
  • 1 tsp Cooking wine (Shaoxing wine)
  • 1/4 tsp Salt (for eggs)
  • 1/4 tsp Salt (for beans, adjust to taste)
  • 1 pinch White pepper powder
  • 2 tbsp Cooking oil (divided)

Recipe Notes Before You Start

  • Check the Beans: Taste a raw bean (or pinch it). If the skin feels thick or leathery, peel it off. If it’s a baby bean, leave it on for extra fiber and texture.
  • Heat Control: Don’t overcook the eggs in the first step. They should just be set. They will cook more when returned to the pan.

Mise en Place / Prep

Cooking happens fast, so have everything ready.

  • Chop Aromatics: Finely chop the scallion. Slice the red pepper into small rings or dice.
Chop Aromatics
  • Prep Eggs: Crack the eggs into a bowl. Add the cooking wine and 1/4 tsp salt. Beat well until the yolk and white are fully combined.
  • Prep Beans: Wash the shelled fava beans and drain well.

How to Make Stir-Fried Fava Beans with Eggs

Step 1: Scramble the Eggs

Scramble the Eggs

Heat a wok or skillet over medium-high heat. Add about 1 tablespoon of oil. When the oil is hot, pour in the egg mixture. Quickly stir-fry (hua chao) until the eggs are just set and solidified. Remove the eggs from the pan and set aside on a plate.

  • Why: Removing the eggs prevents them from becoming rubbery while we cook the beans.

Step 2: Sauté Aromatics

Add the remaining oil (about 1 tbsp) to the pan. Add the chopped scallion and red pepper rings. Stir-fry briefly until fragrant.

Step 3: Stir-fry and Braise the Beans

Stir-fry and Braise the Beans

Add the fava beans to the pan. Stir-fry for about 1 minute to coat them in the oil and aromatics. Add the remaining 1/4 teaspoon of salt.

  • The “Men” (Braise) Step: If the pan is very dry, add a splash of water (about 1 tbsp). Cover the pan with a lid and let it braise/steam on medium heat for 2 minutes.
  • Visual Cue: The beans should turn a deeper, vibrant green and become tender.

Step 4: Combine and Serve

Combine and Serve

Remove the lid. Pour the cooked eggs back into the pan. Stir everything together so the flavors meld. Just before turning off the heat, sprinkle with white pepper powder. Toss once more and transfer to a serving plate.

FAQ / Troubleshooting

Q: Can I use frozen fava beans? A: Yes, frozen fava beans are a great convenience. They are often already double-peeled (skins removed). Just rinse them under warm water to thaw before cooking.

Q: Can I use lima beans or edamame instead? A: Yes. Edamame makes a great substitute, though the flavor will be nuttier. If you like edamame, check out my Shrimp, Cucumber, and Egg Stir-fry which uses similar techniques.

Q: My beans are tough. What happened? A: You likely had older beans with thick skins. For “Can Dou,” large beans usually require removing that outer grey shell. Or, you didn’t braise them long enough.

Q: Is this dish spicy? A: Only if you use a spicy red chili. If you use a red bell pepper, it is completely mild and kid-friendly.

Tips for Success

  • Don’t skip the “Men” (Braise): Fava beans are starchy. Unlike leafy greens, they need that 2 minutes under the lid to ensure the starch cooks through and becomes creamy rather than chalky.
  • Season lightly: This is a fresh spring dish. Heavy sauces will mask the delicate sweetness of the beans.

Variations & Make-Ahead

  • Add Meat: For a non-vegetarian version, you can add diced ham or Chinese sausage, similar to my Cucumber and Egg Stir-fry with Ham.
  • Make-Ahead: This dish is best enjoyed fresh. Reheating can make the eggs rubbery and the beans lose their vibrant color.

Serving Suggestions

Serve hot immediately. The vibrant colors make it a beautiful centerpiece for a family meal.

What to Serve With It

This mild, savory dish pairs wonderfully with bolder flavors or soups.

How to Store & Reheat

  • Fridge: Store in an airtight container for up to 2 days.
  • Reheat: Microwave gently or stir-fry briefly in a pan.
  • Freezer: Not recommended. The eggs will become watery and spongy.
