Steamed Crab & Pork Cake (Suo Zi Xie Zheng Rou Bing): Umami Disc

The dinner my uncle orders at every Zhejiang restaurant is this one – a disc of seasoned minced pork topped with a whole swimming crab, steamed together so the crab’s juices soak into the meat below. A home cook wrote it in eight steps with the layering as the whole idea: pork below, crab above, steam until both are done. I made it as written, and it is the dinner that looks like a restaurant platter and tastes like a seafood kitchen.

Steamed crab and pork cake on a serving plate

Suo zi xie zheng rou bing (梭子蟹蒸肉饼) is steamed swimming crab and pork cake – seasoned minced pork pressed into a disc, topped with a cleaned swimming crab, and steamed until the pork is set and the crab is cooked, the juices fusing the two layers. The original is an 8-step recipe with the layering as its craft.

What Is Steamed Crab and Pork Cake?

This is a Zhejiang-style steamed dinner: minced pork is seasoned and pressed into a thick disc in a plate, a whole swimming crab (cleaned – shell off, gills and belly removed) is laid on top, and the whole plate steams until the pork cake is set and the crab is cooked through. As it steams, the crab’s juices run down into the pork, seasoning it from above – the recipe’s whole logic.

The method is the layering. The pork disc must be seasoned and pressed firm – the recipe’s steps for the cake – and the crab cleaned properly, then the two steam together for enough time that both finish at once. The result is a two-layer platter: pork that tastes of the sea, and a crab whose juices have a home. It is the seafood-pork pairing that the region does better than anyone.

For the pure-steamed-crab side of the same platter, my steamed hairy crab is the crab-only classic.

Why This Version Works

  • Pork below, crab above. The layering is the dish – the crab’s juices run down and season the pork.
  • A seasoned pork disc. Minced pork, seasoned and pressed firm – the cake that holds the crab.
  • The crab cleaned properly. Shell, gills, and belly removed – the clean start of the steam.
  • One steam, both done. The pork sets and the crab cooks in the same steam – a one-plate dinner.
  • The juices are the sauce. No added sauce – the crab’s liquor and the pork’s drippings make the plate.

Equipment Needed

  • A steamer large enough for the plate
  • A plate that fits the steamer
  • Kitchen scissors for the crab

Ingredients

  • 300 g (10.5 oz) minced pork
  • 1 swimming crab, cleaned
  • Scallion and ginger, chopped, for the pork
  • 1 tbsp light soy sauce
  • 1 tbsp cornstarch
  • Salt and white pepper, to taste
  • 1 tbsp cooking wine

Ingredient Notes

Minced pork: 300 g (10.5 oz), seasoned with scallion, ginger, soy, cornstarch, salt, and pepper, and pressed firm – the cake. My steamed egg with minced pork shows the same seasoned-pork base in a custard.

Swimming crab: One, cleaned – shell, gills, and belly removed – laid on top. My steamed hairy crab is the crab-only treatment.

Cooking wine: A spoon over the crab before steaming – the deodorizer that keeps the plate clean.

Prep & Mise en Place

Season the minced pork with the aromatics, soy, cornstarch, salt, and pepper, and press it into a firm disc in the plate. Clean the crab – shell, gills, and belly off.

The sequence: lay the crab on the pork disc, splash with the wine, and steam until the pork is set and the crab is cooked through.

Common Mistakes When Making This Dish

1. A dry, tough pork cake. Cause: under-seasoned or over-steamed pork. Fix: the cornstarch binder and the right steam time.

2. A fishy plate. Cause: uncleaned crab or no wine. Fix: clean the crab fully and splash the wine.

3. A loose, crumbling cake. Cause: pork pressed too loosely. Fix: press it firm and even.

4. Undercooked crab. Cause: too little steam. Fix: steam until the crab is fully cooked.

5. A watery plate. Cause: nothing – the juices are the sauce. Serve them over the rice.

6. A bland pork layer. Cause: timid seasoning. Fix: the recipe’s soy, salt, and pepper – the pork carries the plate.

Variations

Shrimp instead: A layer of shrimp on the pork – my steamed egg with shrimp and broccoli is the custard version of the pairing.

More ginger: Extra ginger in the pork for the seafood-clean warmth – and with steamed egg with shrimp and broccoli and silky steamed egg with minced pork, the steamer is full.

Chili: A sliced chili on the crab for heat – and with poached pork belly with garlic sauce and fish-fragrant eggs the savory table is complete.

The seafood-steam shelf: With steamed hairy crab, silky scrambled eggs with shrimp, and silky steamed egg, the steamer is full.

Frequently Asked Questions

What is a swimming crab? Suo zi xie – the swimming crab of the eastern coast, meaty and sweet.

Do I need to remove the gills? Yes – the recipe’s cleaning is explicit, and it is what keeps the plate clean.

How long does it steam? Until the pork is set and the crab cooked – about 15-20 minutes over a steady boil.

What do I do with the juices? Spoon them over rice – they are the plate’s sauce.

Can I use frozen crab? Fresh is best; frozen works with a minute or two more.

How to Serve

Serve the platter with rice, spooning the juices over – with steamed hairy crab and silky scrambled eggs with shrimp for a seafood-steam table, or beside 10-minute chives and eggs for variety.

Storage & Reheat

Refrigerate for up to 1 day; reheat in the steamer 5 minutes. Do not freeze. Never leave the plate out more than 2 hours.

About the Author & Recipe Development

I am Lin, a professional Chinese chef and food writer with a decade in restaurant kitchens before turning to recipes. This xiachufang cook’s crab and pork cake is my uncle’s Zhejiang order, and the recipe’s layering logic – pork below, crab above, juices as the sauce – is exactly why it works. I tested it as written. I have not tested the shrimp or chili variations, so those are your experiments, not my claims.
