Salmon Fried Rice with Brown Rice (Sanwenyu Caomi Chaofan)

Growing up in Sichuan, fried rice was often a way to use up leftovers, transforming cold rice into a golden, comforting meal. Usually, we indulged in rich Seafood Fried Rice, laden with scallops and shrimp. However, as I’ve spent more time developing recipes for home cooks in the U.S. and Europe, I’ve found a growing desire for meals that balance that classic “wok hei” flavor with better nutrition.

Salmon Fried Rice with Brown Rice

This Salmon Fried Rice (三文鱼糙米炒饭) is my “treasure” recipe for when I want something lighter but satisfying. It combines the nutty chewiness of brown rice with rich, omega-3-packed salmon and crisp broccoli. It’s vibrant, packed with dietary fiber and high-quality protein, and every bite makes your taste buds say “Wow!” just like the original comfort food.

Why This Recipe?

I know many of you struggle with brown rice; it can feel heavy or bland compared to fluffy white jasmine rice. However, brown rice actually shines in stir-fries because its firmer texture holds up beautifully against high heat without turning mushy.

In this recipe, we utilize the natural oils from the salmon to flavor the grains, reducing the need for excessive added oil. It is a fantastic option if you are managing your weight or simply want a nutrient-dense dinner that comes together in under 20 minutes.

What Is Salmon Brown Rice Fried Rice?

Unlike a traditional Yangzhou Fried Rice, which focuses on BBQ pork and shrimp, this dish is a modern homestyle adaptation popular among health-conscious cooks in China. It retains the technique of high-heat stir-frying but swaps refined carbs for whole grains.

The key difference here is the use of fresh salmon cubes. When seared quickly with the rice, the salmon remains tender and pink, offering a creamy contrast to the chewy grains and crunchy broccoli.

About the Author & Recipe Development

I’m Lin, and I spent over a decade cooking in professional kitchens from Chengdu to international culinary institutes. One challenge I faced when developing this recipe was ensuring the salmon didn’t dry out. Salmon cooks much faster than pork or beef.

Through multiple tests in my kitchen, I found that cutting the salmon into uniform cubes and adding them after the aromatics ensures they cook gently to a perfect medium-well temperature (about 145°F/63°C) right as the dish finishes. This method preserves the delicate fats in the fish.

Key Ingredients & Substitutions

  • Brown Rice: I use a tri-color brown rice blend (often found at Costco or Sam’s Club), but any medium-grain brown rice works.
    • Substitutions: You can use red rice, black rice, or even quinoa for a different texture.
  • Salmon: Fresh Atlantic or King salmon fillets are best. You want a fish with good fat content.
    • Substitutions: If salmon isn’t available, firm tofu or diced chicken breast are safe alternatives, though the flavor profile will change.
  • Broccoli: Adds crunch and color.
    • Substitutions: Asparagus, snap peas, or Chinese Broccoli with Oyster Sauce stems (gai lan) work perfectly.
  • Light Soy Sauce: This provides the savory “umami” saltiness.
    • Buying Tip: Look for “Pearl River Bridge” or “Lee Kum Kee.” See our guide on Light Soy Sauce.
  • Oil: Since salmon releases fat, we use minimal oil. Olive oil, flaxseed oil, or avocado oil are great healthy choices here.

Ingredients

  • Cooked Brown Rice: 2 cups (approx. 300g), preferably day-old and chilled.
  • Salmon Fillet: 4-5 oz (approx. 100-150g), skin removed, cut into 1/2-inch cubes.
  • Egg: 1 large, beaten.
  • Broccoli: 1/2 cup, cut into small florets.
  • Onion: 1/4 medium onion, diced.
  • Light Soy Sauce: 1 tablespoon.
  • Salt: 1/2 teaspoon (adjust to taste). See our guide on Salt.
  • Cooking Oil: 1-2 teaspoons (Olive oil or Avocado oil).
  • White Pepper: A pinch (optional, for that classic Chinese kick). See White Pepper.

Recipe Notes Before You Start

  • Rice Texture: Brown rice needs to be cooked thoroughly before stir-frying. If you are cooking it fresh, use slightly less water than usual so it isn’t gummy. If you have a cast iron pot, check out How to Cook Perfect Rice in a Cast Iron Pot.
  • Salmon Prep: Ensure your salmon cubes are uniform in size so they cook evenly.
  • Heat Control: While woks are great, a large non-stick skillet works very well for this recipe since we are using less oil.

Mise en Place

  1. Rice: If using fresh rice, spread it out on a baking sheet to cool and let the steam escape.
  2. Vegetables: Wash the broccoli. Blanch it in boiling water for 30-60 seconds until bright green, then drain well.
  3. Salmon: Pat the salmon dry with paper towels before cutting into cubes.
  4. Aromatics: Dice the onion.

How to Make Salmon Fried Rice

  • Scramble the Egg: Heat a wok or large skillet over medium-high heat. Add the oil. Pour in the beaten egg. Let it sit for a few seconds until it begins to set, then scramble it loosely.
  • Add Rice: Before the egg is fully hard, add the brown rice. Stir-fry and use your spatula to break up any clumps, mixing the egg evenly throughout the grains.

  • Add Aromatics: Toss in the diced onion. Continue to stir-fry for 1-2 minutes until the onion becomes translucent and fragrant.

  • Cook the Salmon: Add the salmon cubes to the pan. Sprinkle with the Salt and drizzle the Light Soy Sauce around the perimeter of the pan (this helps caramelize the soy sauce).

  • Stir-Fry to Finish: Continue to toss everything gently. You want to cook until the salmon turns opaque and pale pink, which should take about 2-3 minutes. Note: Be gentle so you don’t break the fish cubes.
  • Add Greens: Toss in the blanched broccoli florets. Stir for another 30 seconds to combine and warm the vegetables through.

Common Mistakes When Making Salmon Fried Rice

  • Using Hot, Wet Rice: This is the #1 enemy of fried rice. If your brown rice is wet, the dish will turn into a mash. Always let it steam dry.
  • Overcooking the Salmon: Salmon becomes dry and chalky if cooked too long. Add it towards the end of the cooking process as instructed.
  • Too Much Oil: Remember, salmon is a fatty fish and will release its own oils as it cooks. If you add too much cooking oil initially, the dish may feel greasy.

Troubleshooting

  • Rice is sticking? Brown rice starches can be sticky. Ensure your pan is hot enough before adding ingredients. If using stainless steel, ensure it passes the “water droplet test” (mercury ball test).
  • Salmon tastes fishy? This usually happens if the salmon isn’t fresh or wasn’t seared properly. Ensure the heat is medium-high when the salmon hits the pan to cauterize the outside. You can also splash a teaspoon of Shaoxing wine when adding the salmon to neutralize odors.

Food Safety & Preparation

  • Salmon Temperature: According to the USDA, fish should be cooked to an internal temperature of 145°F (63°C). Visually, the flesh should be opaque and separate easily with a fork.
  • Reheating Rice: Be careful with leftover rice. Cool it quickly and store it in the fridge. When reheating, ensure it reaches 165°F (74°C) to prevent Bacillus cereus food poisoning.

Serving Suggestions

This dish is a complete meal in a bowl, containing your carbs, proteins, and veggies. However, if you want to spice things up, a dollop of my Homemade Chili Garlic Sauce adds a wonderful kick.

For a larger family meal, you might serve this alongside a simple soup like a Spinach Egg Drop Soup to keep the meal light and hydrating.
