There is something undeniably addictive about the scent of cumin hitting a hot pan. If you’ve ever walked through a bustling night market in China, that smoky, spicy aroma of cumin skewers (chuanr) is instantly recognizable. Today, I’m sharing a way to bring that magic into your home kitchen without needing a grill or skewers: Pan-Fried Cumin Chicken Strips (Zi Ran Ji Liu).

This dish transforms humble chicken breast into something spectacular. It’s savory, slightly spicy, and coated in a toasted sesame and cumin crust that provides an incredible texture.
Why You’ll Love This Recipe
- Incredible Texture: By slicing the chicken into uniform strips and marinating them properly, we ensure they stay juicy, avoiding the dryness often associated with chicken breast.
- Big Flavor: The combination of cumin, chili powder, and sesame seeds mimics the taste of Chinese BBQ. If you are a fan of my Roasted Cumin Lamb Chops, you will adore this lighter poultry version which captures that same smoky profile.
- Quick & Easy: Unlike complicated stews, this comes together in about 20 minutes, making it even faster than making Rice Cooker Cola Chicken Wings for a busy weeknight meal.
About the Author & Recipe Development
Hi, I’m Lin! Growing up in Sichuan province with a father who was a professional chef for over 20 years, I learned that the secret to great Chinese food isn’t always about high heat (wok hei)—sometimes it’s about the marinade.
I developed this recipe because I wanted the flavor of street-side skewers but the convenience of a quick stir-fry. While I love a traditional Spicy Chicken Stir-fry (La Zi Ji), dealing with bones and deep-frying isn’t always practical for a Tuesday night. This recipe uses a “dry-fry” technique to crisp up the spices at the very end. It is quite similar to my Garlic Cumin Chicken, but cutting the meat into strips allows for a faster, more even sear.

Ingredients You Will Need
The Chicken:
- 2 Chicken Breasts: Sliced into strips about the thickness of your ring finger.
- Aromatics: 5-6 scallions (cut into sections) and 3-4 slices of ginger.
The Marinade:
- 1 tbsp Shaoxing Wine: Essential for removing any raw poultry smell.
- 2 tbsp Light Soy Sauce: For that savory, salty umami base.
- 1 tbsp Oyster Sauce: Adds depth and helps the marinade cling to the meat.
- 1/2 tbsp Dark Soy Sauce: Primarily for giving the chicken a beautiful golden-brown color.
- 1/4 tsp Salt.
The Spice Mix:
- 1 tbsp Chili Powder (Adjust to your heat tolerance).
- 1 tbsp Cumin Powder (The star of the show).
- 1 tbsp White Sesame Seeds.
- 1/2 tbsp Sugar: To balance the saltiness and heat.

Instructions
Step 1: Prepare the Chicken
Slice the chicken breast with the grain into strips roughly the length and thickness of your ring finger. Uniformity is key here for even cooking.

Step 2: Marinate
In a mixing bowl, combine the chicken strips with the Shaoxing Wine, Light Soy Sauce, Oyster Sauce, Dark Soy Sauce, salt, scallion sections, and ginger slices. Mix well by hand until the liquid is absorbed. Let it sit for 10-15 minutes.

Step 3: Prepare the Spice Blend
In a small bowl, mix the chili powder, cumin powder, white sesame seeds, and sugar.
Tip: If you love extra heat, you can add a splash of Homemade Chinese Chili Oil to the marinade.

Step 4: Pan-Fry the Chicken
Heat oil in a frying pan over medium heat. Remove the ginger and scallions from the chicken marinade (discard them). Place the chicken strips in the pan in a single layer. Fry until both sides are golden brown and cooked through.
Technique Tip: Don’t constantly flip them. Let them sear to get that nice color, similar to how we sear meat for Black Pepper Steak.

Step 5: Season and Serve
Once the chicken is golden, pour the dry spice blend over the meat. Toss everything quickly for about 30 seconds to toast the spices and coat the chicken evenly. The smell should be intoxicating!
Serving Idea: This goes beautifully with rice. To make it a complete meal, I often serve it with a refreshing side like Smashed Cucumber Salad or some Stir-fried Lettuce with Garlic to balance the heat.

Step 6: Garnish
Sprinkle with chopped green onions for a pop of color and serve immediately!

Common Mistakes When Making Cumin Chicken
- Overcooking the Chicken: Chicken breast dries out fast. Because we cut these into thin strips, they only need a few minutes per side. If you are worried about dryness, you might prefer a thigh-meat recipe like my Scallion Oil Braised Chicken.
- Burning the Spices: Cumin and chili powder can turn bitter if burnt. Do not add the dry spice mix at the beginning of cooking. Add them only when the chicken is fully cooked, just to toast them for the final 30 seconds.
- Overcrowding the Pan: If you put too much chicken in at once, it will steam instead of sear. Cook in batches if you have a small pan.
- Skipping the Sugar: The small amount of sugar in the spice mix is crucial. It doesn’t make the dish sweet; it enhances the savory umami, much like in my Universal Chinese Street Food Sauce.

- Storage: Leftovers can be stored in an airtight container for up to 3 days. Reheat in a pan to crisp it back up.
