Lemon Curd Roll Cake (Ning Meng Ning Ru Dan Gao Juan): Low Sugar

The cake my aunt baked for the family members who could not eat sugar was this one – a lemon curd roll sweetened with xylitol, its sponge light enough to feel like a reward and its curd tart enough to keep it honest. A home baker wrote it with careful notes about which oil she substituted and why, and I tested it as written, sugar-free sweetener and all. It is the rare low-sugar cake that nobody at the table labels as diet food – it is simply a very good roll cake.

Lemon curd roll cake with cream and melon filling

Ning meng ning ru dan gao juan (柠檬凝乳蛋糕卷) is lemon curd roll cake – a thin sponge cake baked at 180°C (356°F) for 20 minutes, spread with homemade lemon curd, whipped cream, and strips of melon, then rolled into a log and chilled until set. The original is a 17-step recipe sweetened with xylitol throughout, with the baker’s frank asides about oil choice and technique.

What Is Lemon Curd Roll Cake?

Lemon curd roll cake (柠檬凝乳蛋糕卷) is a Swiss-roll style cake built in three parts: a sponge baked thin in a sheet pan, a homemade lemon curd made with lemon, egg, xylitol, and butter, and a lightly sweetened whipped cream with strips of melon for texture. The sponge is rolled around the fillings and chilled, then sliced to show the spiral.

The construction is the lesson. The sponge uses separated eggs – whites whipped with xylitol to stiff peaks and chilled while the yolks are beaten pale with oil and water – then the two are folded together, poured into a lined pan, and baked at 180°C (356°F) for 20 minutes until golden. The lemon curd is made first: egg, xylitol, and lemon juice stirred over a water bath until thick, then butter melted in. The finished sponge must cool to hand temperature before rolling – the original’s warning against flipping too soon, which cracks the cake.

For another sponge-cake technique from the same family, my steam-baked milk chiffon cake is the tender sibling of this roll.

Why This Version Works

  • Xylitol keeps it low-sugar, not low-taste. The original sweetens the curd, the sponge, and the cream with xylitol – a sugar alcohol that bakes like sugar without the blood-sugar spike.
  • Lemon curd made first, gently. Egg, xylitol, and lemon juice over a water bath, stirred until thick, then butter – the tart filling that anchors the roll.
  • Stiff-peak whites, chilled. The whites are whipped fully and refrigerated while the yolks are beaten – the structure that keeps the sponge light.
  • Cool to hand temperature before rolling. The original’s warning: never flip the warm cake too soon, or the golden skin cracks.
  • The 1/3 cream trick. Most of the whipped cream goes near the far third with the melon strips, so the spiral holds its shape when sliced.

Equipment Needed

  • A sheet pan lined with paper
  • A hand or stand mixer
  • A heatproof bowl for the water-bath curd
  • A spatula for folding and rolling

Ingredients

  • For the lemon curd: 1 lemon (juice), 1 egg, 40 g xylitol, 25 g butter
  • For the sponge: 4 eggs, 30 g xylitol (for whites), 10 g xylitol (for yolks), 35 g flavorless oil (the baker prefers sunflower; original was corn oil), 40 g water, 5 g skim milk powder, 40 g cake flour
  • For the cream: 100 g heavy cream, 20 g xylitol, a few strips of honeydew melon

Ingredient Notes

Xylitol: The recipe’s sweetener throughout – 40 g in the curd, 30 g in the whites, 10 g in the yolks, 20 g in the cream. Use a fine sugar alcohol; it dissolves cleanly in the sponge. My matcha chiffon cake shows the same whipped-sponge method.

Oil: 35 g of a flavorless oil. The baker’s note is honest: the original used corn oil; she finds it has an off-taste and prefers sunflower. Any neutral oil works – my steam-baked milk chiffon cake uses the same oil-and-water emulsion.

Cake flour + milk powder: 40 g low-gluten flour sifted with 5 g skim milk powder – the tender crumb and a faint dairy note.

Melon: A few strips of honeydew – the fresh, cool crunch inside the roll, the original’s choice.

Prep & Mise en Place

Make the lemon curd first: beat the egg, add 40 g xylitol and 40 g lemon juice, stir over a water bath until thick, then melt in the butter. Separate the eggs – yolks in one bowl, whites in a clean dry bowl. Sift the flour with the milk powder.

The sequence: curd, then sponge (whites first, chilled; yolks beaten pale with oil and water; folded together), bake 20 minutes at 180°C (356°F), cool to hand temperature, whip the cream, fill, roll, chill, slice.

Common Mistakes When Making Lemon Curd Roll Cake

1. The sponge cracks when rolling. Cause: rolling while warm. Fix: cool to hand temperature first – the original’s explicit warning.

2. A flat, shapeless spiral. Cause: cream spread evenly edge to edge. Fix: concentrate the filling in the far third as a bar.

3. Curd that never thickens. Cause: the water bath too cool or not enough stirring. Fix: keep the bath simmering and circle constantly until thick.

4. Whites that will not whip. Cause: fat in the bowl. Fix: a clean, dry bowl – any yolk breaks the foam.

5. A dense, heavy sponge. Cause: overmixing the fold. Fix: lift and fold gently, stopping at even.

6. A splitting roll when sliced. Cause: the cream not stiff enough. Fix: whip the cream to hard peaks – soft cream squishes out.

Variations

Other fruits: Mango, strawberry, or peach strips replace the melon – my matcha chiffon cake and steam-baked milk chiffon cake are the other members of the sponge family.

More lemon: A little lemon zest in the curd for a louder tart note. The cake family also includes my Chinese date cake and yellow millet sticky rice cake.

Chocolate: A teaspoon of cocoa with the flour for a chocolate sponge around the lemon curd.

Sugar swap: Use regular sugar in the same amounts if xylitol is not your sweetener – the structure is identical. For other bake-simple sweets, my pumpkin chestnut pound cake and crispy sticky rice apple cakes round out the shelf.

Frequently Asked Questions

Can I use regular sugar? Yes – the same amounts work; the recipe is simply written for xylitol.

Why is the sponge rolled at hand temperature? A warm sponge is still setting its structure; rolling it cracks the skin – the original’s warning.

How long should it chill? At least 1 hour, until the log is firm enough to slice cleanly.

Can I make the curd ahead? Yes – 2 days refrigerated; warm it gently before spreading.

Is xylitol safe? In normal baking amounts, yes – note it can be toxic to dogs, so keep the cake away from pets.

How to Serve

Serve the roll cold, sliced to show the spiral – with steam-baked milk chiffon cake and matcha chiffon cake for a cake table, or with cloud-soft milk bread rolls for a fuller sweet spread.

Storage & Reheat

Refrigerate the roll, covered, for up to 3 days; slice as needed. It is best within 2 days – the melon softens. Do not freeze the finished roll; the cream separates.

About the Author & Recipe Development

I am Lin, a professional Chinese chef and food writer with a decade in restaurant kitchens before turning to recipes. This xiachufang baker’s low-sugar roll is my aunt’s table cake, and her asides are the recipe’s honesty – the oil swap explained, the “watch a video if unsure” note, the hand-temperature warning. I tested it as written and confirmed the concentrated-cream trick gives the clean spiral. I have not tested the chocolate or mango variations, so those are your experiments, not my claims.
