Easy Pan-Fried Tofu with Garlic Sauce (香煎豆腐)

Growing up as a Sichuan girl in my family’s restaurant, I saw my dad, a chef of 30 years, create incredible, complex banquet dishes. My parents met in the kitchen and ran their restaurant for over 20 years, so I literally grew up surrounded by amazing food. But the dish I remember most fondly wasn’t a fancy one. It was this simple pan-fried tofu.

Easy Pan-Fried Tofu with Garlic Sauce

On busy afternoons, after school, my dad would whip this up for me in about 15 minutes. It’s the perfect example of a Chinese homestyle dish (家常菜, jiā cháng cài)—using the humblest ingredients to create something truly delicious.

This recipe is my secret weapon for anyone who thinks tofu is “boring.” The tofu gets a super crispy, golden-brown crust from a quick dip in egg and cornstarch, and then it’s tossed in a rich, glossy, savory garlic sauce. It’s comforting, incredibly fast, and so much better than takeout. It’s one of those dishes that brings me right back to my childhood, and I’m so excited to share it with you.

Why You’ll Love This Recipe

  • Incredibly Fast: This entire dish comes together in 15 minutes, making it perfect for a busy weeknight.
  • Amazing Texture: The egg and cornstarch coating creates a crispy, golden crust that holds its texture, even after being coated in the delicious sauce.
  • Beginner-Friendly: If you’re new to cooking with tofu, this is the perfect starting recipe. It’s forgiving and delivers restaurant-quality results.
  • Better Than Takeout: It’s healthier, cheaper, and you control all the ingredients—no mystery additives, just pure, savory flavor.

What is Pan-Fried Tofu (香煎豆腐)?

Pan-Fried Tofu (香煎豆腐, xiāng jiān dòufu) is a classic and beloved homestyle dish found all over China. Unlike deep-fried tofu, this version is shallow-fried in a pan, making it much more approachable for a home kitchen.

If you love the savory, garlicky flavor of this pan-fried tofu but are craving that intense, smoky street-food vibe, you have to try my Air Fryer Sizzling Tofu (Tie Ban Dou Fu). It uses a fragrant Chinese BBQ seasoning blend and takes only 15 minutes in the air fryer to achieve that authentic night market crust without needing a heavy iron griddle!

The process is simple:

  1. Firm tofu is cut into cubes.
  2. It’s coated in a light batter (in this case, cornstarch and egg).
  3. It’s pan-fried until golden brown on all sides.
  4. A pre-mixed sauce is poured over the top, which thickens into a beautiful, glossy glaze in seconds.

It’s a staple because it’s fast, satisfying, and transforms tofu into the star of the show.

Key Ingredients You’ll Need

The ingredient list is simple, but the type of ingredient is very important.

  • Tofu: This is the most critical choice. You must use Firm or Extra-Firm Tofu. You can find this in the refrigerated section of almost any supermarket.
    • Why not other types? Do not use “Silken” or “Soft” tofu for this recipe. They have too much water and are very delicate; they will completely fall apart in the pan. We need tofu that can hold its shape.
  • Cornstarch: This is the secret to a crispy crust. It creates a light, crunchy shell that is much better than what you get with all-purpose flour. You can also use potato starch.
  • Egg: The egg wash works with the cornstarch to create a slightly thicker, richer crust that holds onto the sauce beautifully.
  • Light Soy Sauce: This is for umami (savory flavor), not just saltiness. I recommend brands like Kikkoman or Pearl River Bridge.
  • Oyster Sauce: This adds a wonderful savory-sweet flavor and a rich, velvety body to the sauce. You can find Lee Kum Kee brand in most stores, even outside of Asian markets.
    • Vegetarian/Vegan? Use a vegetarian “oyster” sauce, which is made from mushrooms and has a similar flavor profile.
  • Garlic: Use fresh-minced garlic. The pre-minced jarred stuff just doesn’t have the same bright, sharp flavor.
  • Sugar: Just a little bit balances the saltiness of the soy and oyster sauces.

A Critical First Step: Press Your Tofu

Before we begin, you must press your tofu. This is a non-negotiable step that restaurant chefs always do.

Why? Tofu is packed in water. If you try to fry wet tofu:

  1. The hot oil will splatter dangerously.
  2. The water will turn to steam, steaming your tofu instead of frying it. This makes it soggy and prevents it from getting crispy.

How to Press Tofu (Easy Method):

  1. Drain the water from the tofu package.
  2. Wrap the entire block of tofu in 2-3 layers of paper towels or a clean, lint-free kitchen towel.
  3. Place the wrapped block on a plate.
  4. Put something heavy on top, like a cast-iron skillet, a few large cans of tomatoes, or a stack of plates.
  5. Let it sit for at least 30 minutes, or up to an hour. You’ll be amazed at how much water comes out.

After pressing, unwrap the tofu and cut it into 1-inch (2.5 cm) cubes.

Mise en Place: Get Ready to Cook

This recipe cooks in about 5 minutes, so you need to have every single component ready before you turn on the stove. This is the restaurant secret to a fast, successful stir-fry.

  • Station 1 (Sauce): In a small bowl, whisk together the minced garlic, light soy sauce, oyster sauce, sugar, salt, cornstarch, and water. Set it aside.
Sauce
  • Station 2 (Dredging): You need two shallow bowls.
    • Bowl 1: Add the beaten egg.
    • Bowl 2: Add the cornstarch.
Add the beaten egg.
  • Station 3 (Tofu): Your pressed and cubed tofu.
  • Station 4 (Garnish): Have your chopped cilantro or scallions ready by the stove.

How to Make Crispy Pan-Fried Tofu

Once your mise en place is set, you’re ready to cook.

  • Coat the Tofu: This is a simple three-step process. Take one piece of tofu at a time:
    • First, dredge it in the cornstarch, tossing to coat all sides. Gently shake off any excess.
    • Second, dip it into the beaten egg, letting any excess drip off.
    • Set the coated piece on a clean plate. Repeat with all the tofu.
  • Pan-Fry the Tofu:
    • Heat the oil in a large non-stick or well-seasoned cast-iron skillet over medium-high heat. The oil should be shimmering.
    • Carefully place the coated tofu cubes in the pan in a single layer. Do not overcrowd the pan! If you put too many pieces in at once, the pan temperature will drop and the tofu will steam instead of fry. Work in two batches if necessary.
    • Let the tofu cook, undisturbed, for 2-3 minutes per side, until all sides are golden brown and crispy.
    • Use tongs or a spatula to gently flip them.
Pan-Fry the Tofu
  • Add the Sauce:
    • If you worked in batches, return all the crispy tofu to the skillet.
    • Give your sauce a quick re-whisk (the cornstarch will have settled at the bottom).
    • Pour the sauce all over the tofu.
Add the Sauce
  • Finish the Dish:
    • The sauce will bubble and thicken almost immediately, thanks to the cornstarch. This should only take 30-60 seconds.
    • Gently toss the tofu to coat every piece in the glossy sauce.
    • Turn off the heat, stir in your chopped cilantro and scallions, and serve immediately!

Serving Suggestions

This dish is fantastic on its own, but it’s truly meant to be served with steamed jasmine rice. The rice is the perfect plain canvas for that rich, savory sauce.

To make it a complete meal, I love to serve it with a simple vegetable side and a light soup.

How to Store and Reheat Leftovers

  • Storage: Honestly, this tofu is best eaten immediately while it’s crispy. The crust will soften as it sits. However, leftovers are still delicious! Store them in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Do not use the microwave, as it will make the tofu rubbery. The best way to reheat is in an air fryer at 375°F (190°C) for 3-5 minutes, or in a skillet over medium heat until warmed through. This will help crisp up the outside again.

Variations and Tips

  • Gluten-Free: To make this gluten-free, use tamari instead of light soy sauce and be sure to use a certified gluten-free oyster sauce. Cornstarch is naturally gluten-free.
  • Vegan: To make this vegan, simply omit the egg. The cornstarch-only coating will be lighter and crispier (more like salt and pepper tofu). You must also use a vegetarian mushroom-based oyster sauce.
  • Spicy Version: Love some heat? Add 1-2 teaspoons of chili garlic sauce, sriracha, or a little of my dad’s favorite, Authentic Mapo Tofu-style Doubanjiang (Sichuan chili bean paste) to the sauce mixture.

💡 FAQs and Troubleshooting

Why did my tofu come out soggy? There are two likely reasons:

  1. You didn’t press the tofu: Excess water is the #1 enemy of crispiness.
  2. You overcrowded the pan: This drops the oil temperature, causing the tofu to steam. Always fry in a single layer, even if it means working in batches.

Can I make this in an air fryer? Yes! It’s a great option.

  1. Coat the tofu in starch and egg as directed.
  2. Spray the air fryer basket with oil.
  3. Place the tofu in a single layer and spray the tops with oil.
  4. Air fry at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through, until golden and crispy.
  5. While the tofu is frying, warm the sauce in a small pot or the microwave until it thickens slightly.
  6. Toss the crispy air-fried tofu with the thickened sauce and serve immediately.

My sauce is too thick/thin! What do I do?

  • Too thick? Whisk in a tablespoon of water or low-sodium chicken broth until it’s the right consistency.
  • Too thin? It just needs to cook for a few more seconds. The cornstarch in the sauce will activate with heat and thicken it.

Food Safety

  • When handling raw eggs, be sure to wash your hands and any surfaces the egg may have touched to prevent cross-contamination.
  • According to the USDA, leftover cooked dishes should be refrigerated within two hours of cooking. You can find more on their “Leftovers and Food Safety” guide here .

Notes

Note 1 (Tofu): It is essential to use Firm or Extra-Firm tofu. Soft or silken tofu will disintegrate. Pressing the tofu is the key to getting a crispy, non-soggy result.
Note 2 (Gluten-Free): For a gluten-free version, use tamari instead of light soy sauce and ensure your oyster sauce is certified gluten-free.
Note 3 (Vegan): For a vegan version, omit the egg (the cornstarch-only crust will be lighter and crispier) and use a vegetarian (mushroom-based) oyster sauce.
