Authentic Asparagus & Shrimp Stir-fry (Lu Sun Xia Ren in 20 Mins)

Today, we are making a classic, vibrant, and incredibly healthy dish: Asparagus, Shrimp, and Lily Bulb Stir-fry (芦笋虾仁炒百合). This dish is beloved in Chinese households for its clean flavors, crisp textures, and high nutritional value. The natural sweetness of the shrimp pairs perfectly with the earthy crunch of the asparagus and the subtle, slightly medicinal notes of the fresh lily bulb. It’s light, refreshing, and comes together in just minutes once your prep is done.

Asparagus & Shrimp Stir-fry

What Is Asparagus and Shrimp Stir-fry?

In traditional Chinese cooking, we value dishes that highlight the natural integrity of the ingredients rather than masking them with heavy sauces. This stir-fry is a perfect example. It relies on a quick blanching process for the vegetables and a classic velveting technique (上浆) for the shrimp to ensure everything retains its vibrant color and crisp-tender bite.

Ingredients

The Core Ingredients:

Ingredients
  • Live or Fresh Shrimp: 7 oz (200g). If using live shrimp, a quick 30-minute freeze makes them much easier to peel.
  • Asparagus: 8 fresh spears. Look for firm, bright green stalks.
  • Fresh Lily Bulb (百合): 1/2 of a bulb. Fresh lily bulbs can be found in the produce section of well-stocked Asian grocery stores. There are generally two types: sweet (粉百合) and slightly bitter (药百合). If yours is the slightly bitter variety, a quick blanching will help mellow it out.

For the Shrimp Marinade (Velveting):

  • Shaoxing Wine: 1 tsp. Essential for removing any seafood odors.
  • Salt: 1/4 tsp.
  • White Pepper: A pinch.
  • Egg White: 1/2 of a large egg white.
  • Cornstarch: 1 tbsp.
  • Cooking Oil: 1 tbsp (to seal the moisture).

Equipment Needed

  • A wok or a large skillet
  • A spider skimmer or slotted spoon (for blanching)
  • A mixing bowl

Prep & Mise en Place

Proper preparation is the secret to a flawless stir-fry. Because the actual cooking time is under 5 minutes, you must have all your ingredients prepped and within arm’s reach.

Prep & Mise en Place
  • The Shrimp Freeze Hack: Place live shrimp in the freezer for about 30 minutes. This causes the meat to contract slightly from the shell, making peeling and deveining incredibly easy without compromising the texture.
  • Lily Bulb Care: Gently separate the lily bulb petals and wash them thoroughly. Discard any bruised or heavily oxidized outer layers. Keep the separated petals submerged in a bowl of cold water until you are ready to blanch them, as they oxidize and turn black quickly when exposed to air.
  • Asparagus Prep: Cut the asparagus on a bias (rolling cut) to expose more surface area. Snap off and discard the woody, tough ends.

Cooking Process

  • Marinate the Shrimp (15 minutes): In a bowl, combine the peeled shrimp with salt, Shaoxing wine, white pepper, and the egg white. Massage the mixture into the shrimp until it feels slightly sticky. Add the cornstarch and mix well. Finally, pour in 1 tablespoon of cooking oil to seal the marinade. Cover and refrigerate for 1 hour. Chef’s Tip: Before cooking, use a slotted spoon to drain off any excess liquid so the shrimp fry cleanly.
  • Blanch the Lily Bulb (30 seconds): Bring a pot of water to a boil. Add the lily bulb petals and blanch for just 30 seconds until they turn slightly translucent. Immediately remove and plunge them into cold water to stop the cooking and prevent discoloration.
  • Blanch the Asparagus (2 minutes): In the same boiling water, add a pinch of salt and a few drops of oil (this keeps the asparagus vibrant green). Blanch the asparagus for about 2 minutes. Remove and immediately shock in cold water to preserve the crispness.
  • Velvet the Shrimp (2-3 minutes): Heat a wok or skillet over medium heat with 2 tablespoons of oil. Add the drained shrimp and gently slip-fry them just until they turn pink and curl into a “C” shape.
  • Bring it Together (1 minute): Leave the shrimp in the wok, and immediately add the drained asparagus and lily bulb petals. Toss everything together over medium heat. Season with a tiny pinch of salt to taste. Do not add heavy sauces—let the natural sweetness of the shrimp and vegetables shine. Serve immediately!

Why Velveting Works: Velveting (上浆) coats the shrimp in a protective barrier of egg white and starch. This prevents the delicate muscle fibers from seizing up when exposed to the intense heat of the wok, ensuring the shrimp remains tender, bouncy, and juicy while locking in its natural moisture.

Common Mistakes & Troubleshooting

  • Mistake: The shrimp is rubbery and tough.
    • Cause: Overcooking.
    • Solution: Shrimp cooks incredibly fast. Remove them from the heat the second they turn pink and form a “C” shape. If they form a tight “O”, they are overcooked.
  • Mistake: The dish is watery.
    • Cause: Not draining the blanched vegetables or the marinated shrimp properly.
    • Solution: Always shock your blanched vegetables in cold water, then drain them thoroughly in a colander or pat them dry before adding them to the hot wok.

Frequently Asked Questions

  • Can I use frozen shrimp? Yes! Thaw them safely overnight in the refrigerator or under cold running water. Pat them completely dry with a paper towel before marinating.
  • What if I can’t find fresh lily bulb? If fresh lily bulb is unavailable, sliced fresh water chestnuts or even jicama make a great substitute, providing a similar satisfying crunch and mild sweetness.
  • Can I make this ahead of time? This dish is best enjoyed immediately after cooking to maintain the crisp textures. However, you can prep and blanch the vegetables and marinate the shrimp up to a day in advance.

How to Serve

This light and refreshing stir-fry pairs beautifully with a steaming bowl of jasmine rice. To build a balanced, multi-course Chinese meal, I recommend serving it alongside:

Storage & Reheat

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheating: Reheat gently in a skillet over medium-low heat with a splash of water until just warmed through. Avoid the microwave if possible, as it will easily overcook the shrimp.
  • Freezing: Do not freeze this dish. The asparagus will become mushy, and the lily bulb will lose its delicate crunch.
