Air-Fryer Cola Chicken Wings (Ke Le Ji Chi): No-Oil Caramel Glaze

The wing dish my nephew asks for with the air fryer is this one – cola chicken wings, no oil added, the wings air-fried until the skin tightens and then glazed with a reduced cola sauce that caramelizes to a shine. A home cook wrote it in six steps with the no-oil promise in the title and the cola glaze as the whole trick. I made it as written, and it is the sticky-sweet classic made without the fryer’s oil bath.

Air-fryer cola chicken wings with a caramel glaze

Ke le ji chi (可乐鸡翅) is cola chicken wings – chicken wings cooked with cola, whose sugar reduces into a sticky, caramel glaze. The air-fryer version marinates the wings, air-fries them with no oil, and finishes with the reduced cola sauce. The original is a 6-step recipe with the no-oil method as its appeal.

What Are Air-Fryer Cola Chicken Wings?

Cola chicken wings (可乐鸡翅) are a Chinese home classic: chicken wings braised with cola, soy, and aromatics until the cola’s sugar reduces into a sticky, caramel-sweet glaze. The air-fryer version keeps the flavor but skips the oil: the wings are marinated, air-fried until the skin is crisp, then tossed or finished in a reduced cola sauce that glazes them with the classic caramel shine.

The method is the cola. The cola’s sugar is the glaze – reduced over the heat (or with the air-fried wings) until it turns thick and glossy, sweet with a caramel edge and balanced by soy. The no-oil air fryer does the cooking; the cola does the flavor.

For the steamed chicken side of the same bird, my steamed mushroom chicken is the gentle, juicy alternative to these crisp wings.

Steamed Mushroom Chicken (Xiang Gu Zheng Hua Ji)
This Steamed Mushroom Chicken is a classic Chinese home-style dish. By using a ‘velveting’ technique with cornstarch and steaming, the chicken thighs remain incredibly slippery, tender, and juicy. It creates its own savory gravy that is perfect over steamed rice.

Why This Version Works

  • The cola IS the glaze. Its sugar reduces into the sticky caramel – the dish’s whole flavor.
  • No oil – the air fryer’s work. The wings crisp from their own skin; no oil bath needed.
  • Marinate first. The wings take the soy and aromatics before the air fryer.
  • Soy balances the sweet. The classic salt under the caramel – the cola wings’ balance.
  • Glaze to the shine. The reduced cola coats the crisp wings – the sticky finish.

Equipment Needed

  • An air fryer
  • A bowl for the marinade
  • A small pan for the glaze (or the air fryer itself)

Ingredients

  • 500 g (1.1 lb) chicken wings
  • 1 can of cola (about 330 ml)
  • 2 tbsp light soy sauce
  • Ginger, garlic, and scallion, to taste
  • A little salt and pepper, for the marinade

Ingredient Notes

Chicken wings: 500 g (1.1 lb), marinated first – the crisp half of the dish. My steamed mushroom chicken is the tender alternative.

Cola: One can, reduced into the glaze – the dish’s whole sweet-caramel character. My hong shao rou shows the soy-braise logic of the same balance.

Soy: The salt that balances the cola’s sugar – the classic pairing.

Prep & Mise en Place

Marinate the wings with soy, ginger, garlic, scallion, salt, and pepper – at least 20 minutes.

The sequence: air-fry the wings until crisp, then reduce the cola (with the soy) into a glaze and coat the wings, or toss the wings in the reduced glaze to finish.

Common Mistakes When Making These Wings

1. Soft, soggy skin. Cause: cooking the wings in the cola. Fix: air-fry first, glaze after – the order is the texture.

2. A burnt, bitter glaze. Cause: reducing the cola too far. Fix: stop at the glossy stage – it thickens as it cools.

3. A one-note sweet wing. Cause: no soy. Fix: the soy is the salt under the caramel.

4. Bland, unseasoned meat. Cause: a short marinade. Fix: 20 minutes minimum with the aromatics.

5. Uneven cooking. Cause: crowded air fryer. Fix: room around each wing.

6. A sticky mess. Cause: glazing too early. Fix: crisp first, glaze last.

Variations

Spicier: A sliced chili or chili flakes with the glaze – my steamed mushroom chicken is the gentle chicken plate, and 10-minute chives and eggs and cucumber and egg stir-fry the fast-wok family.

Orange: A squeeze of orange with the cola for a citrus edge – and with steamed mushroom chicken and 10-minute chives and eggs the chicken drawer is full.

Garlic-heavy: More garlic in the marinade – my 10-minute chives and eggs is the fast-wok side, and hong shao rou the soy-braise classic.

The wing shelf: With steamed mushroom chicken and 10-minute chives and eggs, the chicken drawer is complete.

Frequently Asked Questions

Really no oil? The air fryer crisps the wings’ own skin – the no-oil promise.

Why reduce the cola separately? To keep the skin crisp – cooking the wings in cola softens it.

How long does it take? About 30 minutes including the marinade – and with steamed mushroom chicken and steamed egg with milk and pork floss the chicken dinner is complete.

Is it very sweet? Sweet with a caramel edge, balanced by the soy – the classic balance, and with silky steamed egg with minced pork and steamed egg with minced pork the chicken-and-egg table is set.

Can I use diet cola? Regular cola reduces best; diet lacks the sugar for the glaze – and with hong shao rou and tomato egg noodles the dinner table is complete.

How to Serve

Serve the glazed wings warm with rice or as a snack – with steamed mushroom chicken and hong shao rou for a saucy table, or beside 10-minute chives and eggs for variety.

Storage & Reheat

Refrigerate 2 days; re-crisp in the air fryer 3-4 minutes. Do not microwave – the glaze softens the skin.

About the Author & Recipe Development

I am Lin, a professional Chinese chef and food writer with a decade in restaurant kitchens before turning to recipes. This xiachufang cook’s air-fryer cola wings are my nephew’s request, and the recipe’s crisp-first-glaze-last order is exactly why the no-oil version works. I tested it as written. I have not tested the orange or chili variations, so those are your experiments, not my claims.
